Nose
Raisins and dried figs first, then orange peel oil, a dusting of clove and nutmeg, and dark chocolate shavings over sherry-soaked oak.
Palate
Full and oily, almost chewy. Sweet raisin and date up front, warm baking spice mid-palate, dark chocolate and charred orange peel toward the back, with oak tannin and sherry sweetness balancing.
Finish
Long and smooth, fading from dark chocolate to dried fruit and a soft oak warmth that lingers.
How to serve and what to pour it with
Neat in a tulip glass at room temperature, maybe a drop of water to open the spice. Let it sit five minutes after pouring. Sip slowly; the layers show up on the second glass, not the first.
