Nose
Heather honey and baked apple first, then toasted malt, a wisp of soft peat smoke, and a twist of orange peel.
Palate
Medium-full and rounded, honeyed orchard fruit up front, toasted grain and gentle smoke in the middle, citrus peel and a warm ginger spice on the back.
Finish
Long and warming, with soft smoke, honey, and a lingering spicy oak tingle.
How to serve and what to pour it with
Serve neat at room temperature in a tulip glass or copita. A few drops of water open the honey and tame the spice. Let it rest a minute after pouring. Sip slowly; the smoke builds gently toward the end.
