Nose
Warm honey and vanilla first, then green apple and pear skin, with a faint toasted oak and a soft malt sweetness underneath.
Palate
Rounded and silky, almost oily in a good way. Honeyed malt leads, vanilla and baked apple follow, then toasted oak and a gentle cinnamon and clove spice that never turns hot.
Finish
Long and smooth, honey fading slowly with a last trace of oak and soft spice. No smoke, no bite, just warmth.
How to serve and what to pour it with
Neat in a tulip glass at room temperature, and give it a minute to open before you sip. A few drops of water loosen the honey and pull out more orchard fruit, so try it both ways. Skip ice unless you want it chilled, since cold mutes the malt.
