Nose
Soft corn sweetness first, then red cherry and plum from the wine cask, with vanilla and a faint clove and oak spice in the background.
Palate
Round and smooth, medium bodied. Sweet corn and toffee up front, red fruit in the middle, then drying tannins and gentle oak spice on the back end.
Finish
Medium length, drying and lightly tannic, with fading red fruit and a whisper of vanilla and oak.
How to serve and what to pour it with
Neat in a rocks glass at room temperature, or add a single large ice cube to soften the tannins and open the red fruit. Let it rest a minute after pouring to let the wine cask aromas settle. A few drops of water can tame the oak if you find it drying.
