Nose
Caramel and vanilla lead, then dried cherry and fig, a dusting of cocoa, and toasted oak sitting underneath it all.
Palate
Full and rounded on entry, sweet caramel up front, dark fruit and chocolate in the middle, baking spice and toasted oak building through a warm, smooth mid-palate. Bold but never harsh.
Finish
Long and warming, toasted oak and cinnamon lingering with a soft caramel echo.
How to serve and what to pour it with
Serve neat in a rocks glass at room temperature, or add a single large cube if you want the caramel to step forward and the proof to calm down. Give it a few minutes in the glass before the first sip, it opens noticeably. A drop or two of water softens the oak and pulls out more fruit.
