Nose
Dried blackcurrant and cherry lift first, then cedar shavings, worn leather, a wisp of pipe tobacco, and cocoa powder underneath.
Palate
Full bodied but settled, the tannins soft and woven in. Blackcurrant and dried cherry lead, cedar and leather follow, tobacco and cocoa on the back end, gentle oak holding it together. Acid still bright enough to keep it from feeling tired.
Finish
Long and dry, echoing leather, tobacco, and a dusting of cocoa that lingers.
How to serve and what to pour it with
Serve at about 62 to 65 degrees, in a Bordeaux glass. Stand the bottle upright a day ahead if there's sediment, then decant gently and give it 20 to 30 minutes of air. A mature 2007 doesn't need hours, just enough to open. Pour the last inch carefully.
