Nose
Ripe black cherry and dark berry jam lead, with a clear pull of vanilla, caramel, and toasted oak. Baking spice sits on top.
Palate
Full bodied and rounded, almost creamy from the barrel. Black cherry and berry fruit up front, then vanilla, caramel, and toasted oak. Tannin is soft but present, and the baking spice warms the midpalate.
Finish
Warm and lingering, with sweet oak, vanilla, and a last note of black cherry. The spice fades slowly.
How to serve and what to pour it with
Serve at cool room temperature, around 65 degrees, in a wide-bowled red wine glass. A short decant of 20 to 30 minutes opens the oak and fruit. This is rich enough for a splash of water if you want it softer, but no ice. Pair with food that has some sweetness or char to match the barrel.
