Tasting notes

Nose

Deep caramel and vanilla rise first, then toasted oak and a swirl of clove and cinnamon. A little air brings out dark fruit and a faint char.

Palate

Full and weighty, almost syrupy, with sweet caramel up front that turns to toasted oak and baking spice. Heat is present but integrated, and a drop of water softens it without washing out the barrel.

Finish

Long and warming, with oak and spice lingering. The heat fades slowly, leaving a dry, toasty impression.

How to serve and what to pour it with

Neat in a glencairn at room temperature lets the aromas build. For the high proof, add a few drops of water, not ice, to open the caramel and tame the burn. Sip slowly; the finish lasts.
