Nose
Soft smoke first, then sea air and honeyed malt. Green apple and pear lift out, with a thread of orange peel and a faint briny edge underneath.
Palate
Medium bodied and rounded, almost silky. Honeyed malt leads, orchard fruit follows, gentle peat smoke drifts through the middle, orange peel brightens the back. Warm but never hot, balanced and easy.
Finish
Long and warming. Smoke fades slowly into malt sweetness, leaving a light briny tang that lingers.
How to serve and what to pour it with
Neat at room temperature in a tulip glass, that shape gathers the smoke and sea air instead of letting them escape. A few drops of water open the honey and fruit without flattening the peat, so add them sparingly and taste as you go. Skip ice, it mutes the coastal character you paid for.
