Nose
Green apple and pear lead, fresh and bright, with a squeeze of lemon and a faint toasted brioche note that adds a little weight behind the fruit.
Palate
Light bodied with a fine, persistent bead. Crisp green apple and pear up front, citrus mid palate, a touch of brioche, then dry and clean with bright acidity keeping it lively.
Finish
Dry and refreshing, medium length, with green apple and a last hint of citrus lingering cleanly.
How to serve and what to pour it with
Serve well chilled, around 40 to 45 degrees, in a white wine glass or a flute if you want the bead to last. No ice. Open it over the sink or let it rest a moment, since a young brut can spit on the first pour. Pour steadily down the side to keep the mousse intact.
