Nose
Blackberry and plum lead, then cracked black pepper and a wisp of smoked meat. A little damp earth underneath keeps it savory, not sweet.
Palate
Medium to full bodied, rounded tannins that stay supple. Dark fruit rolls through first, pepper and a savory, meaty note build in the middle, earthy and dry on the back.
Finish
Closes savory and earthy, with pepper lingering and the fruit fading slowly. Moderate length, dry and clean.
How to serve and what to pour it with
Serve at cellar temperature, around 60 to 65 degrees, in a standard red wine glass with a wide bowl. No decanting needed, but a half hour open softens the pepper. If it feels tight, a quick swirl does more than a splash of water. Keep the bottle cool on the table.
