Nose
Dried cherry leads, then red plum and a dusting of clove and cinnamon. A faint cocoa note sits underneath, quiet and warm.
Palate
Medium to full bodied, rounded and smooth. Bright cherry and plum up front, then dried fruit and baking spice mid palate, cocoa and soft tannins carrying it through. Acidity keeps it lively.
Finish
Warm and gently spiced, lingering with dried cherry and a last hint of cocoa. Moderate length, easy to keep sipping.
How to serve and what to pour it with
Serve at cool cellar temperature, around 60 to 65 degrees, in a wide bowl so the dried fruit and spice open up. Give it 20 to 30 minutes of air in the glass or a quick decant, since Ripasso can start a little tight. No ice. A practical tip: this is a food wine, so pour it with the meal rather than before it.
