Nose
Blackberry and cassis come up first, ripe and dense, then a dry cedar note that keeps the fruit from feeling sweet. A little air teases out something darker, like graphite.
Palate
Full bodied and firm. Ripe dark plum and blackberry fill the middle, wrapped in tannins that grip without turning harsh. Oak shows as a soft toast, and a spice note, maybe clove, sits underneath.
Finish
Long and structured, with the dark fruit fading slowly into a dry, spicy oak echo. Tannins leave a clean, mouthwatering tug.
How to serve and what to pour it with
Serve it at cellar temperature, around 60 to 65 degrees, in a Bordeaux glass so the tannins have room to soften. Decant for 30 to 45 minutes if you are pouring it now, or just give it a few good swirls. A thin slice of hard cheese alongside will tame the grip.
