Palate
Full bodied and firm, dark fruit up front, blackberry and cassis, then cocoa and cedar through the middle. Tannins are assertive, acidity moderate, giving shape and drive.
Finish
Long and dry, echoing black cherry and cocoa, with cedar lingering and tannin holding firm.
How to serve and what to pour it with
Serve at cellar temperature, around 60 to 65 degrees, in a wide bowl Cabernet glass. Decant for an hour or let it breathe in the glass to soften the tannins. A small pour, swirled, opens the fruit. If you open it young, give it time before judging.
