Nose
Ripe blackberry and cassis come up first, then a lift of cedar and warm baking spice. The fruit reads dark and concentrated, with a faint graphite edge.
Palate
Full bodied and firm. Blackberry and cassis roll through, cedar and clove in the middle, tannin gripping firmly. Acidity keeps it from feeling heavy. Dry throughout, with a savory spice note on the back.
Finish
Long and structured, tannin lingering. Blackberry and cedar fade slowly, leaving a dry, spicy trail.
How to serve and what to pour it with
Serve at cellar temperature, around 60 to 65 degrees, in a wide bowl Cabernet glass. Decant an hour if you are pouring it young, which softens the tannin and opens the fruit. A small splash of water tames the grip if you want it more approachable. Pour generously and give it air.
