Nose
Soft heather honey, warm malted barley, a slice of green apple and pear. Barely any alcohol prickle, which tells you this Speysider was built gentle from the start.
Palate
Light bodied and silky, almost creamy going down. Honey leads, then soft biscuit malt, a little poached orchard fruit in the middle, and a faint vanilla sweetness from the oak. No harsh edge anywhere.
Finish
Short to medium and clean. The honey fades slowly into dry malt and a whisper of pear, leaving the mouth soft.
How to serve and what to pour it with
Serve neat at room temperature in a tulip glass or a standard rocks glass, and give it a minute to open after pouring. A splash of cool water, maybe a teaspoon, loosens the honey and pulls the orchard fruit forward. Skip ice if you can, since the chill mutes what little complexity is here. Save the ice for a warmer day and a taller glass.
