Nose
Rye grain leads with cracked black pepper and a clove note, then caramel and a faint dried cherry behind it. A little air brings out vanilla and toasted oak.
Palate
Medium-full and oily, with the pepper and clove hitting first, then a wave of caramel and vanilla. Dried stone fruit sits in the middle, and the spice stays lively through the back without turning harsh.
Finish
Long and warm, with pepper and clove fading slowly into caramel and a soft oak tannin. It stays smooth for the proof.
How to serve and what to pour it with
