Nose
Caramel and vanilla lead, then toasted oak with a dusting of clove and cinnamon. A little dried cherry and orange peel sits underneath, sweeter as it opens in the glass.
Palate
Round and medium bodied, silky going down. Caramel and vanilla first, toasted oak and baking spice through the middle, a soft sweetness holding it together without getting syrupy.
Finish
Warm and lingering, drying gently. Dried fruit and a faint brown sugar sweetness stay with you a good while.
How to serve and what to pour it with
Neat at room temperature in a rocks glass, or one large cube if you want the oak tamed and the caramel pushed forward. A few drops of water open the spice on the nose. Let it rest a minute after pouring before you sip.
