Nose
Green apple and pear lead, fresh and clear, with a squeeze of lemon zest and a faint bready note from time on the lees.
Palate
Light to medium body, fine active bead, bright acidity keeping it lean and dry. Orchard fruit repeats, apple and pear, then citrus pith, no sweetness to speak of.
Finish
Clean and brisk, medium length, with the citrus fading last and leaving the mouth ready for another sip.
How to serve and what to pour it with
Chill it well, around 45 degrees, and pour into a white wine glass or a tulip rather than a narrow flute so the apple and pear aromas can open. Open it over a sink or let it rest a moment, the pressure is lively. A splash in the glass wakes it up if it has been sitting open.
