How to serve and what to pour it with
Serve slightly below room temperature, around 60 to 65 degrees, in a standard red wine glass. Give it 20 to 30 minutes of air in the glass or a quick decant to soften the tannins. No ice. A good rule: pour a glass while you cook, it opens as the food hits the table.
