Palate
Medium bodied and round, creamy from lees stirring, with green apple and citrus up front, vanilla and baking spice through the middle, and a clean line of acidity keeping it fresh.
Finish

How to serve and what to pour it with
Serve it well chilled, around 50 to 55 degrees, in a standard white wine glass so the oak and fruit stay in balance. No ice, no decanting. A splash of cool water opens the vanilla if it feels too tight. Tip: let it sit in the glass five minutes after pouring to let the spice unfold.
