Nose
Dried rose petals first, then a swirl of tar and sour red cherry. Let it sit and the cherry turns brighter, almost cranberry.
Palate
Medium to full bodied, lean and firm. Cranberry and red cherry up front, licorice and dried herb through the middle, tannins gripping and dusty, acidity cutting clean.
Finish
Long and savory, earthy, with the tannin drying the cheeks and a last echo of cherry and tar.
How to serve and what to pour it with
Serve at about 65 degrees, in a wide bowl Burgundy glass so the tar and rose have room. Decant 30 to 60 minutes, or pour and give it time in the glass; Nebbiolo tannin needs air to soften. A short decant is the practical tip, and it opens further over an hour.
