Nose
Smoldering peat smoke, sea salt, smoked mussels, a squeeze of lemon peel, and a quiet vanilla sweetness underneath.
Palate
Medium bodied and oily, the smoke rolls in soft and integrated. Salted butter, smoked fish, orange peel, then a gentle honeyed oak sweetness. Peat lingers but never overwhelms.
Finish
Long and warming, with fading smoke, sea salt, and a last flicker of citrus.
How to serve and what to pour it with
Serve neat at room temperature in a tulip glass or copita. A few drops of water open the citrus and soften the smoke. Let it rest a minute after pouring to let the peat settle. Sip slowly; the 15 years show best without ice.
