Nose
Deep molasses first, then burnt sugar and vanilla bean, with a faint charred oak and a whisper of clove riding above it.
Palate
Full and coating, almost syrupy, though it never turns cloying. Dark caramel and molasses lead, vanilla softens the middle, and a low warmth of baking spice builds underneath.
Finish
Long and warming, the molasses fading into a dry, gently spiced tail of clove and toasted sugar.
How to serve and what to pour it with
Neat in a small snifter at room temperature lets the molasses show itself, but a single large cube opens the vanilla and tames the heat. For a Dark and Stormy, pour it over plenty of ice and float the ginger beer, don't stir it in. Rinse the jigger with hot water before measuring, it pours thick.
