Nose
Deep molasses and dark caramel lead, with vanilla bean and a charred oak edge. A faint clove and black pepper spice lifts the sweetness.
Palate
Full and rounded, almost creamy. Molasses and burnt sugar up front, then vanilla and toasted oak. A gentle spice warms the midpalate, and the sweetness stays in check, never cloying.
Finish
Long and lingering, with molasses and vanilla fading slowly, leaving a soft warmth and a whisper of oak.
How to serve and what to pour it with
Neat, at room temperature in a snifter or rocks glass, or over one large cube if you want it a touch softer. A splash of water opens the vanilla. For a Dark 'n Stormy, use ginger beer and a lime wedge, but keep the rum cold and pour it last so it floats.
