Nose
Juniper leads, sharp and piney, with bright lemon and orange peel behind it and a faint dusty coriander seed note.
Palate
Crisp and lean on the tongue, bracing rather than plush. Juniper hits first, then citrus oil, a whisper of angelica root, drying out fast with no sweetness to soften it.
Finish
Long and dry, juniper and bitter citrus peel lingering cleanly with a cool, almost resinous tingle.
How to serve and what to pour it with
Keep the bottle in the freezer and pour it ice cold. For a martini, stir with a splash of dry vermouth and a lemon twist rather than an olive. In a gin and tonic, use plenty of ice and a wedge of lime, and skip the extra sugar. A chilled coupe beats a stemmed glass here.
