Nose
Toasted oak leads, then caramel and vanilla bean, with a lift of dried cherry and a dusting of baking spice.
Palate
Full and rounded, almost creamy. Caramel and marshmallow up front, oak char and cinnamon through the middle, dried fruit and a soft sweetness underneath. Gentle spice keeps it from cloying.
Finish
Long and warm, fading slowly into vanilla, toasted oak, and a lingering brown sugar sweetness.
How to serve and what to pour it with
Serve neat at room temperature in a rocks glass, or add one large cube if you want the sweetness reined in. A few drops of water open the caramel and tame the oak. Let it sit five minutes after pouring; the marshmallow note shows up late.
