Nose
Rye grain leaps out first, fresh cracked pepper and a faint dill edge, then caramel and vanilla soften the blow, with dried cherry tucked underneath.
Palate
Medium bodied with a lively, oily texture. The pepper hits mid palate, followed by toffee and vanilla, then a wave of dried fruit. Warm but not hot, with a dry grip that keeps it savory.
Finish
Long and drying, the pepper lingers while caramel fades slowly. A clean, spicy echo that invites another sip.
How to serve and what to pour it with
Neat at room temperature in a glencairn, or a rocks glass with one large cube if you want to tame the pepper. A few drops of water open the caramel without dulling the rye spice. Let it rest a minute after pouring to let the alcohol settle.
