Nose
Toasted oak and caramel first, then a clear note of banana and a little dried cherry, with a soft vanilla sweetness underneath.
Palate
Medium bodied and smooth, sweet corn and caramel up front, vanilla and toasted oak in the middle, a faint dried fruit note, and a gentle spice that keeps it from being cloying.
Finish
Mellow and gently smoky, with the charcoal character lingering just long enough and a final whisper of vanilla.
How to serve and what to pour it with
Neat in a rocks glass at room temperature, or over one large cube if you want it a touch softer. A splash of water opens the caramel and banana. For a highball, use plenty of ice and a 1 to 2 ratio with ginger ale or soda.
