The story

The story behind The Hakushu

The Hakushu distillery sits in the forested foothills of Mount Kaikoma in Yamanashi Prefecture, built by Suntory in 1973. It is a mountain site, cool and humid, and the water runs soft through granite. That setting is the whisky: green, herbal, orchard fruit, and a thread of smoke from malt that is partly peated and partly not.

Suntory matures it mostly in American oak, Spanish sherry, and Japanese mizunara oak, which is where the incense and sandalwood notes come from. We have carried these bottles for years, and the 12 year has spent long stretches on allocation. When it lands, it lands quietly.

Hakushu wants clean fat and salt, not sugar. Think sashimi, grilled fish, or a little aged cheese.
Good to know

The Hakushu questions, answered

What is Hakushu whisky?
Hakushu is a Japanese single malt whisky made by Suntory at the Hakushu Distillery in Yamanashi Prefecture. It is distilled from malted barley and known for a green, herbal, lightly smoky character.
Is Hakushu peated?
Yes. Hakushu uses both peated and unpeated malt, so the smoke is light and woven through rather than dominant. It reads more as forest and herb than as heavy Islay peat.
Where is Hakushu distillery located?
The distillery sits in the forests near Mount Kaikoma in Yamanashi Prefecture, Japan. Suntory built it in 1973 at high altitude, and the cool, humid setting and soft granite filtered water shape the whisky.
Who makes Hakushu?
Suntory makes Hakushu, and the brand sits within the Beam Suntory portfolio. The same company owns Yamazaki and Hibiki, which is why Hakushu shares house polish but keeps its own smoky, herbal profile.
