The story behind La Medida
Espadin is the workhorse agave of Oaxaca, and mezcal made from it shows the category plainly: roasted agave, light smoke, and a clean mineral finish. It is distilled from cooked agave hearts, so the smoke comes from the roast, not the barrel, and it is bottled unaged.
