The story behind Bayou
Bayou Rum comes out of Lacassine, Louisiana, in the middle of sugarcane country. Brothers Tim and Trey Litel and their friend Skip Cortese founded the company in 2011; the distillery opened and started shipping in 2013. The molasses is unrefined blackstrap from M.A. Patout and Son, the oldest continuously family owned sugar mill in the United States, and fermentation runs for days on a yeast strain first cultured from wild Louisiana sugarcane.
Master Blender Reiniel Vicente ages the spirit in charred American oak ex-bourbon barrels in Louisiana warehouses, where the heat pushes the angel's share hard. The core aged expressions use a Solera method stacked up to four years. The brand is now owned by Stoli Group. Bayou took Best Spiced Rum in the World at the 2016 World Rum Awards, and the Beverage Testing Institute has handed its Spiced and Select Gold medals above 92 points.
