Nose

Palate
Light body, active mousse, crisp acid up front. Green apple and citrus pith carry through, a touch of toast in the middle, dry and refreshing, not sweet.
Finish

How to serve and what to pour it with
Serve well chilled, around 45 degrees, in a white wine glass or a tulip if you have one. The wider bowl lets the toast show. No ice. Open at the last minute and pour steadily to keep the bubbles lively. A splash in the glass won't hurt if it's too cold.
