Palate
Dense and inky, with a firm tannic grip up front. Ripe blackberry and blueberry fill the middle, black pepper and mocha edge the back. Tannins soften with air.
Finish
Long and structured, echoing dark fruit and pepper, with tannin that keeps the finish firm and dry.
How to serve and what to pour it with
Serve at cellar temperature, around 60 to 65 degrees, in a wide bowl to give the tannins room. Decant 30 to 45 minutes, or pour and let it sit in the glass. A quick splash helps open the fruit. This is a big red, so pair it with food that can stand up to it.
