Distilled from a high-rye mash bill and matured for over four years in #4 char new American oak, Batch 7 is bottled unfiltered at a robust barrel strength that captures every nuance of the spirit’s character. In the glass, the whiskey glows with burnished copper hues. An enticing nose opens with warm buckwheat honey, cinnamon stick, and toasted rye bread, followed by underlying layers of candied orange peel, spearmint, and freshly sawn cedar. The palate balances racy rye spice with velvety caramel, dark chocolate, and roasted pecan, while waves of pink peppercorn and dill roll across the tongue. Nose
Black pepper hits first, then caraway seed and a curl of toasted oak. Dried orange peel and a quiet caramel note sit underneath.
Palate
Medium full in the mouth, with a lively spice that grips the tongue. Pepper and caraway lead, toasted oak follows, then caramel and dried citrus soften the edges. Warm throughout.
Finish
Long and warming, with pepper and toasted oak lingering. A faint dried citrus peel note stays behind.
How to serve and what to pour it with
Neat at room temperature in a tulip glass or a rocks glass, and a few drops of water open the caramel without muting the pepper. One large cube is fine if you want it colder, but skip the small cubes, they dilute too fast. Let it rest a minute after pouring before you sip.
