Nose
Soft honey and baked apple lead, then vanilla cream and a light toasted oak note, with a faint sherry sweetness underneath and a wisp of clove.
Palate
Rounded and silky, almost oily in texture. Orchard fruit up front, pear and yellow apple, then honey and vanilla mid palate, toasted oak and gentle pot still spice on the back. Barely any heat.
Finish
Long and warming, honey fading slowly into toasted oak and a quiet peppery tingle that lingers.
How to serve and what to pour it with
Serve neat at room temperature in a tulip glass or a sturdy tumbler, and let it sit a minute to open. A few drops of water loosen the honey and pull the orchard fruit forward without flattening the spice. Skip ice if you want the sherry cask sweetness intact, one large cube if you like it cooler.
