Marsala is a fortified wine named for the Sicilian city where it has been produced since the 1700s. Winemakers fortify the base wine with grape spirit, then age it in oak or cherry wood, which is why Marsala sits at roughly 17 to 20 percent alcohol and carries notes of dried fruit, caramel, and toasted nuts. Understanding the labels makes buying simple.
Sweet vs. dry: pick by purpose
The biggest decision is sweetness. Dry Marsala is savory and nutty, the classic choice for savory pan sauces, risotto, and veal or chicken marsala. Sweet Marsala is richer and more caramel-forward, ideal for sipping after dinner, for zabaglione, and for dessert recipes. If you are unsure what does marsala wine taste like, start with a dry bottling and a sweet bottling side by side: the difference is immediate.
Read the aging and color terms
- Fine: aged at least one year, the everyday cooking and mixing grade.
- Superiore: aged at least two years, smoother and more complex.
- Superiore Riserva: aged at least four years, the richest and most sippable.
- Ambra: amber-colored, made with white grapes and often sweet.
- Rubino: ruby-colored, made with red grapes such as Grillo or Inzolia blends.
- Oro: golden, made from white grapes.
What is concentrated marsala?
Concentrated marsala, sometimes labeled marsala all’uovo base or simply a reduced cooking Marsala, is a thicker, more intensely flavored version used to add depth without thinning a sauce. A splash goes a long way, and a bottle lasts for months in the pantry. For everyday cooking, a dry Superiore is the workhorse; keep a sweet bottle on hand for desserts.
Drinking marsala wine
Marsala is not only a cooking wine. Serve a chilled sweet Marsala in a small glass alongside almonds, aged cheese, or dark chocolate, or pour a dry Superiore slightly cool before dinner. Treat it like a fortified wine such as sherry or port, and store opened bottles upright in a cool, dark spot for several weeks.
Prices and bottle sizes
Everyday Marsala is one of the most affordable fortified wines you can buy, and larger formats such as 1L and 1.5L bottles offer strong value for kitchens that cook with it often. Our lineup includes Opici, Santini, Parini, Lombardo, Melillo, and G & D in both sweet and dry styles.
