The story behind Saika Yamadanishiki
Junmai Ginjo is a sake grade defined by how the rice is milled and how the brew is made. At least 40 percent of each grain is polished away, and no added brewer's alcohol is used, so the sake is pure rice, water, koji and yeast. Yamadanishiki is the rice often called the king of sake rice, prized for clean, broad flavor and a soft texture.
We keep Saika Yamadanishiki Junmai Ginjo 720mL in the sake section at our Commack shop, usually just a bottle or two at a time. It drinks fragrant and mild, with gentle rice sweetness and a dry finish.
