Oberon Cabernet
Mondavi family Cabernet, poured in Commack since the first vintage.
The story behind Oberon
Oberon was founded in 2005 by Michael Mondavi, whose family name has meant California wine for three generations, under his Folio Fine Wine Partners. The fruit comes from two very different Californias: Napa County and Paso Robles, where winemaker Tony Coltrin layers hillside volcanic soils against alluvial valley floor. Grapes are hand-harvested, fermented in temperature-controlled stainless steel, then given extended maceration to settle the tannins.
Malolactic fermentation happens in French oak, and the wine rests 12 to 14 months in barrel, roughly 45 percent new. The blend stays Cabernet Sauvignon at its core with small additions of Petite Sirah, Zinfandel, Merlot or Syrah for texture. That is why Oberon drinks generous young and still holds a few years in the rack.
