Bourbon is an American whiskey made mostly from corn, distilled and aged in new charred oak barrels. That barrel is where the color and much of the flavor come from: vanilla, caramel, toasted wood, a little spice. Straight bourbon carries a minimum age and no additives, and the style runs from light and sweet to bold and oaky depending on the mash bill and the years in wood.
