The story

The story behind Lagavulin

Lagavulin has distilled on Islay's south coast since 1816, when John Johnston set up legally beside Archibald Campbell's neighboring stillhouse; the two merged under one name by 1837. The barley is malted to roughly 35 ppm phenol, fermented 55 to 75 hours in larch washbacks, then run through pear shaped copper stills at one of the slowest paces on the island. That patience builds the thick, oily spirit behind the bonfire and brine profile.

Most of it sleeps in ex bourbon American oak, with select releases finished in Pedro Ximenez or Oloroso sherry casks. The damp Atlantic air does the rest. Diageo owns the distillery today, and the 16 Year Old has taken Double Gold at the San Francisco World Spirits Competition across multiple decades.

Smoke this heavy wants fat, salt, and bitter. Keep the glass neat and let the food do the arguing.
Good to know

Lagavulin questions, answered

Is Lagavulin a peated whisky?
Yes, Lagavulin is heavily peated. Its malted barley is dried to roughly 35 ppm phenol, which produces the tar, iodine, and campfire smoke the distillery is known for. The long fermentation and slow distillation add weight and sweetness beneath that smoke.
What does Lagavulin 16 taste like?
Lagavulin 16 Year Old tastes of iodine, tar, and dried fig over a long smoky finish. Ex bourbon American oak gives vanilla and brine, and the coastal Islay climate rounds the heavy peat into something sweeter and saltier than the aroma suggests.
Is Lagavulin a single malt?
Yes, Lagavulin is a single malt Scotch whisky. It is made entirely from 100 percent malted barley at one distillery on the Isle of Islay, using water from the local Solum Lochs and pot stills, with no grain whisky blended in.
How should I serve Lagavulin?
Serve Lagavulin neat in a tulip shaped Glencairn glass, or add a small splash of still water. The water opens the tight aromatic phenols and softens the alcohol bite while lifting the sweetness. It is rarely mixed, though it floats well on a Penicillin.
