The story

The story behind George Dickel

George Augustus Dickel ran a Nashville wholesaling firm in the late 1860s, and his name has sat on Tennessee whisky ever since. Production settled at Cascade Hollow in Tullahoma, Coffee County, where the distillery was rebuilt on its current site in 1958. The house mash bill is 84% corn, 8% rye and 8% malted barley.

What separates George Dickel is the chill. The distillate drops to 40 degrees Fahrenheit before it enters the sugar maple charcoal vats, a cold version of the Lincoln County Process that strips harsher compounds and leaves a softer spirit. Barrels rest in single story warehouses, so every cask sees the same Tennessee swing of heat and cold. Dickel spells whisky without the e on purpose, a nod to Scottish standards he thought his own barrels met.
