The story

The story behind Don Simon

Don Simon launched in 1980 under J. Garcia Carrion, the Spanish family winery whose winemaking roots in Jumilla go back to 1890. The brand made its name by putting clean, reliable table wine on supermarket shelves across Spain, first in cartons and lighter bottles, and it has stayed a value benchmark ever since.

The Cabernet is a young wine, called joven in Spain, made from Cabernet Sauvignon and bottled without heavy oak. Fruit comes largely from Castilla-La Mancha, around Valdepenas and Daimiel, with grapes from the family's Jumilla holdings. What you get is soft tannin, bright red berry and a clean finish, at roughly 12.5% ABV.

Buying guidance

Which Don Simon is right for you?

Value is the whole point here. The Don Simon Cabernet Sauvignon 750mL runs $5.99, and so do the Chardonnay, Shiraz and Tempranillo. Step up to the Brut or the Sparkling Sangria at $7.98 and you are still under eight dollars a bottle. For a house pour, a sangria base or a cooking wine you will not wince at using, that math is hard to argue with. Stock shifts, so call the store at (631) 343-7200 to confirm what is on the shelf today.

Don Simon cocktails and pairings

Serve the Cabernet slightly cool, 60 to 64 degrees, with grilled meat, roast pork or a meat sauce. It also makes a clean sangria base.
Good to know

Don Simon questions, answered

Is Don Simon Cabernet Sauvignon a sweet or dry wine?
It is a dry red wine. The fruit is forward and the tannins are soft, so it reads softer and juicier on the palate than a heavily oaked Cabernet, but there is no residual sugar driving it.
Who owns the Don Simon wine brand?
J. Garcia Carrion owns and operates Don Simon. It is an independent Spanish family company, and the family's winemaking history in Jumilla dates to 1890, with the Don Simon brand itself launched in 1980.
Is Don Simon Cabernet aged in oak barrels?
No. Don Simon Cabernet is made as a young wine, joven in Spanish, and is not aged in oak. That keeps the bright ruby color and fresh black fruit intact rather than burying it under toast and vanilla.
Is Don Simon wine suitable for cooking?
Yes. Balanced acidity and a low price make it a practical kitchen wine for stews, reductions and marinades. Use the Cabernet where a recipe calls for dry red, and keep a second bottle for the table.
How do I get Don Simon Cabernet delivered or pick it up?
We offer same-day or next-day delivery across Nassau and Suffolk, free local delivery over $250, and free curbside pickup at our Commack store. Call (631) 343-7200 and we will confirm stock before you order.
