The story behind Corazon
Corazon comes out of Casa San Matias in Los Altos de Jalisco, a distillery running since 1886 and one of the oldest in Mexico. The brand grew from the Plascencia family, with Don Celso Plascencia as patriarch, and today runs as a partnership between the estate under CEO Carmen Villarreal and the Sazerac Company. That Sazerac tie is why you see Corazon resting in Buffalo Trace and Sazerac rye barrels.
Every drop is 100% Blue Weber agave, single estate, hand harvested at six to eight years in highland volcanic soil. Pinas are split and slow cooked in stone and brick ovens, milled, fermented on a house yeast, then double distilled. A controlled oxygenation step after distillation softens the spirit and deepens the aroma. We have poured these for years and the texture is the tell.
