The story

The story behind Cakebread

Cakebread Cellars was founded in 1973 by Jack and Dolores Cakebread in Rutherford, California, and the family still runs the place. The Cabernet Sauvignon comes from estate ranches and long-term grower vineyards across Rutherford, Oakville, Calistoga and the Suscol watershed, so the blend draws on real Napa floor and benchland fruit rather than a single site.

Grapes are picked at night to hold acidity, cold-soaked two days for color and gentle tannin, then aged about 17 months in French oak, roughly 40 to 50 percent new. Small lots of Merlot, Petit Verdot, Cabernet Franc and Malbec round out the Cabernet. We have poured this for decades because it tastes like Napa and not like oak.

Cakebread cocktails and pairings

Serve it at 60 to 65°F and give it 30 to 60 minutes of air. The tannin wants fat and char.
Good to know

Cakebread questions, answered

Is Cakebread Cabernet Sauvignon dry or sweet?
Cakebread Cabernet Sauvignon is dry. Fermentation runs to dryness, so the impression of sweetness comes from ripe Napa fruit and French oak, not residual sugar.
What grapes are in Cakebread Cabernet Sauvignon?
It is predominantly Cabernet Sauvignon with small blending lots of Merlot, Petit Verdot, Cabernet Franc and Malbec. That Bordeaux-style blend rounds the mid-palate and softens the tannin.
How should I serve Cakebread Cabernet Sauvignon?
Serve it at 60 to 65°F and decant 30 to 60 minutes. Pair with grilled or roasted red meat, braised short ribs, portobello mushrooms or aged Cheddar and Gruyere.
Where is Cakebread Cabernet Sauvignon made?
It is made in Napa Valley, California, by Cakebread Cellars, founded in 1973 by Jack and Dolores Cakebread in Rutherford. Fruit comes from estate ranches and grower vineyards across Napa sub-appellations.
