Gin is a juniper forward spirit, and the style of the bottle depends on what the distiller puts around that juniper: citrus peel, coriander, angelica root, orris, cardamom, and sometimes floral or savory notes. London Dry stays crisp and dry, while contemporary gins often lean softer or more citrus bright.
