The story behind Bailey's
Bailey's was conceived in 1973 and launched in 1974, built by a team led by Tom Jago for International Distillers & Vintners. The name came from Bailey's Bistro, a restaurant beneath the creators' office on Greek Street in Soho, London. The R.A. Bailey on the label is fictional, which we have always found funny.
It is made in Ireland, on Nangor Road in Dublin and in Mallusk, Northern Ireland. Fresh Irish dairy cream is about half the volume, emulsified with triple distilled Irish whiskey, cocoa and Madagascar vanilla so it never separates and needs no artificial preservative. Roughly 36 hours from cow to bottle. It stays shelf stable up to 24 months, opened or not, between 32 and 77°F.
