The story

The story behind Avion

Avion comes from Jesus Maria in the Los Altos highlands of Jalisco, where the Blue Weber agave grows at roughly 7,000 feet. Ken Austin and Kenny Dichter founded the brand in 2009, and Pernod Ricard bought it outright in 2018. The piñas roast 72 hours in brick ovens, then ferment in open air and distill twice in small copper pot stills.

What separates Avion is patience. The Reposado rests six months in medium-toast Tennessee ex-bourbon barrels, triple the legal minimum, and the Anejo sits two full years against a one-year floor. A slow activated carbon filtration finishes the job. We have poured these for years and the extra barrel time shows in the glass.
