Aberfeldy Scotch-single
Highland single malt from Perthshire, honeyed and waxy since 1898.
The story behind Aberfeldy
Aberfeldy was built in 1896 by John Dewar and Sons and started distilling in 1898, purpose-built to supply the core malt for Dewar's blends. The distillery sits in the Central Highlands of Perthshire, drawing its process water from the Pitilie Burn, a stream long known for alluvial gold deposits. That is where the nickname, the Golden Dram, comes from.
The house runs a long fermentation of 65 to 85 hours in larch wood washbacks, which builds the heavy esters behind its honeyed fruit character, then distills in four copper pot stills. The spirit rests mainly in ex-Bourbon American oak, with select expressions finished in Oloroso Sherry casks. No peat touches the malt, so the profile stays sweet and thick rather than smoky.
