Palate
Light body, soft mousse, and brisk acidity. Red berry and peach come through in a straight line, dry and crisp, with no sweetness weighing it down.
Finish
Crisp and clean, short but lively, ending on a whisper of red fruit and rose.
How to serve and what to pour it with
Serve well chilled, around 45 to 50 degrees, in a white wine glass or a coupe if you want the bubbles to settle. No ice, it dilutes the mousse. Open at the last minute and pour gently down the side to keep the bead fine.
